Three teams were each sent to top London restaurants – Corrigan’s; Brassiere Joel and Suka – each insisting on its own level of consistence, perseverance and styleAt Brassiere Joel, Alice consistently turned out duck breast to perfection, probably because its a dish she’s so familiar with at home (and also, it was the easiest of the three). Both Annie and James hit a bit of a struggle, with burnt mushrooms, accidental poaching and messy presentation getting under the head chef’s nose, but they brought it back up to standard near the end of service.
Ah quinnelles, how we hate you. And Tom did too during his plating up of a popular squirrel dish. “No, no, no! Again, again, again!” insisted the head chef, as Tom repeatedly failed to spin his spoons correctly. Kennedy also got a tough time from the chef who says things at least three times, “Come on Kennedy, come on, come on, come on!” he chimed as his ox cheek fell apart.Over at Suka, Tim the American was put in charge of the restaurant’s most popular dish, Nasi Goreng, with seven being ordered at once. But shock of all shocks, the task revealed that Tim was cooking only ONE plate at a time, and had failed to do basic multiplication, managing to screw up service and have two diners leave the restaurant. He said it was the first time he thought he couldn’t be a professional chef. No shit, Sherlock.
Not feigned, however, by the fast-paced sweat and anger that swirls these kitchens were Jackie and Polly, who got their presentation and speed to the standard of head chef.But moving swiftly from this to something completely different, was a round of sniffing, feeling and guessing, introduced thanks to the sensory style of Michelin chef Alexis Gauthier, who doesn’t weigh, measure or time anything in his kitchen, relying purely only on his senses and gut.The contestants each had a blindfolded feel and sniff of various cuts of poultry, red meats, vegetables and herbs, with which they had one hour to create a dish to impress.
James’ lamb sausages impressed Alexis, John and Gregg, but Sara’s Thai-style squid didn’t hit the mark, with Alexis describing it as “OK”, leaving her with a truly sullen face. Kennedy got his birds confused, picking duck when he really thought he was choosing chicken. Suffice to say, this boo-boo didn’t impress the judges.
And Tim, who seems to be on another planet in this episode, did the unusual combination of coming up with some bizarre to which the judge never know how to react. He twice baked his sole, deep fried crispy kale and added honey.
Alexis and John liked it, and left Gregg to say: “I still don’t know if he’s brilliant or mad!”Polly’s method of playing it safe produced steak and mash, or otherwise, your classic weeknight dinner. And it showed in the judges’ faces because with an hour to make, the effort wasn’t enough. Alice, too, who landed duck again, still didn’t impress the judges, as she confused her flavours.In the end, it was full time mum and house wife Polly who had to hang up her apron, and get back to cooking mushy stuff for the kids. Obviously they all agreed it had no place in MC.
